Just some eye-cake for ya! :)

Hey everyone! I know it's late, but I at least wanted to get some pictures up for you to check out since I've been MIA the past 2 days. Sorry about that! It won't be better tomorrow, either. I'm working a double! However, I did manage to carve a pumpkin & make 3 dozen cupcakes. That's accomplishing stuff.... right?

Oh Goodness Me, I Apologize!

I'm so sorry! I can't believe how lazy I've been. I've been busy.. but not THAT busy. I mean, I've been on Blogger to read other people's blogs, but I'm having a hard time updating mine! So, this will be a "catch up" post, with a more regular posting schedule to follow. We'll see. I'm trying, okay? Stop silently yelling at me and making me feel guilty. 

Okay, so in recent news, here is a peak into mine & the Mr.'s life: Flat tires. New tires. Dent in truck. Dog with hives. Dog with fleas. State with crazy flea problems. Waiting for orders from the Navy. Getting used to wearing jackets.. everywhere we go. Spending time with great friends. Missing Family. Never ending allergies. Netflix watching. Xbox 360 playing. Pie. Strudel. Cupcakes. Cake. Sleep. 

I would love to elaborate more on those lovely little subjects, but really, they're pretty self-explanatory! LOL. But I will show you some pictures of some of the goodies I've made! :) I will try and post more in detail how-to's and recipes soon! Until then, lets drool. :)

Like I said, I definitely want to share some techniques, recipes, and what not to-do's with you all. I will work on them A.S.A.P. Until then, at least you have pictures to look forward too! :) I know, I know, I need to hurry up! Scout's honor, You will have a recipe post this week!

Blueberry Raspberry Muffins

Today's great creation: Muffins.
(shh, don't tell anyone I very impatiently broke open the muffin before I took the picture!)

They are fantastic! Light, moist, beautiful, and EASY!

Here's the recipe:

Makes 16 Muffins

12.5 ounces of Cake Flour (3 cups)
1 Cup of Sugar
1 tsp. Baking Soda
2 tsp. Baking Powder
1/2 tsp. Salt
1 tsp. Pure Vanilla Extract
1 Egg
1 cup Sour Cream
1/2 cup Condensed Milk (Can Milk)
1/2 cup Vegetable Oil
1 1/2 cups Blueberries
1 cup Raspberries (cut in half)

Preheat oven to 350 degrees F. Spray cupcake tins with nonstick spray or line with cupcake liners.
Mix all dry ingredients together in large bowl.
In a small bowl, toss raspberries & blueberries with about 1/2 cup of the cake flour that you're using in the recipe. Its okay if you've already mixed in the sugar, baking powder, and baking soda.. it's all getting mixed together anyways!
In a separate bowl, mix all of the wet ingredients, just until incorporated, don't over mix them! 
Toss the berries (and all flour that didn't stick to the berries) into the flour/egg mixture, give a quick stir just until everything is happily covered in batter.
Fill each cupcake tin almost to the top.. I used an ice cream scoop and it portioned perfectly!
Bake for 20-25 minutes until lightly golden on top.
Remove the muffins from the tins as soon as your fingers can stand it. :) I got a large sheet pan and just flipped the muffins upside down so I didn't have to touch any of them! :) Just flipped 'em right side up and that was it! 

Let cool & gobble up :)

Martini Cookies

Hi All!! Long time no post. I'm sorry! I have been baking & working like crazy! Yesterday, however, I managed to squeeze in a few martinis ;) 
....Okay, Okay, you caught me.. they were Martini Cookies! 
Made for a very best friend's 21st birthday!! (Happy Birthday A!)
I tried a couple of new techniques, some I'll keep, some I'll pass on. :) 
I did try covering the cookies in fondant - I'm going to keep this one :) It made the whole process SO much easier. Let's not mention that I HATE flooding royal icing, I always add too much water!
Live & learn, right? By the way, I learned from Shelly, over @ cookies & cups. She's a new contributor to the University of Cookie site. They make VLOGS people! Ahem, video blogs for those not "in the know." It really makes learning new stuff so much easier when you can see it done. So... Thanks Shelly! I learned something new this week :)

...With A Cherry On Top!

This cake was made last night, and it is honestly in my top 5! It is SO delicious and rich. 
I call it my "Sundae Cake." 
Also, please notice the new camera! It was an anniversary present from the Husband. I can't believe we've already been married a year! (July 21st - It was an early present!)
It was a chocolate cake with caramel cream cheese frosting in the middle and on top, then covered & surrounded with fudge-topping turned frosting.

YUM! I still just want to take a bite out of it. (& I've already had a piece).

The cake was moist & delicious. Best Chocolate Cake I've ever made!
